Proves sixteen 600x400 trays of breads, leavened desserts and croissants at precisely controlled temperature and humidity. There's no fan, so the dough surface doesn't dry, and a humidity sensor, anti-condensation ceiling and water recirculation keep conditions steady up to 50 °C. Integrated digital control. For the BakerTop MIND.Maps BIG line; trolley sold separately.
